@Damon Schreiber: I've read that the cockles from the UK are mostly exported to other European countries and I would imagine that they would be exported alive-alive-oh.
The company employing these guys is a very professional set-up called Kingfisher Seafoods Ltd and they've written to me to say they want to use the photos for a new website - my first photographic commission!
